Can you lock the head/holder so it doesn't spin or rotate once you adjust the height to where you want it?

No you can't, the head will spin around in the looked. Even with that, I'd say it was still a good investment. Very sturdy, never had any issues with mine.

Does this jack have the acme screw adjustment? Or is it only the main 'coarse' adjustment with the pin?

Hello. The jack stand has two adjustments. First is the round tube that houses the screw, it can be raised and lowered and locked in place with washer type lock mechanism. The head can also be adjusted up and down by turning the handle located below the V shaped head. Having worked in the Oil Field my entire life and being a welder for many years, for the money these are great jack stands. Heavy duty and fairly priced. You wont regret the purchase. i have 8 of them and love them
